
Butternut, Feta and Cous Cous Salad by Angela Ocker
This is one of my easy and favorite salad recipes. It is a great additional to a traditional braai of chops and wors.
Ingredients:

1 Cup cous cous

1 Cup water [bring to boil]

1 Table spoon butter

1 Whole butternut cubed

1/2 Cup pumpkin seeds

1 Cup Feta
-
Lemon Juice [if you like]
Method:
Bring the water to boil but then removing it from the heat. Add the cup of cous cous to the already warm water. Let this boil hard for 1 minute scrapping through a fork continuously to separate the grains. Add the butter and again fork through separating the grains. Remove from pot to serving bowl.
Cube one whole butternut and cook in oven at 180 degree for approximately 20 minutes or until cooked. Add to cous cous with pumpkin seeds and cubed/crumbed feta. Mix together and add lemon juice but only if you like it! So maybe try it separately with lemon juice fist before adding to the bowl.
